Easter Rice Pie
Linda’s Recipe
Ingredients
1-quart milk
8 oz rice
½ c sugar add at end
2 eggs lightly beaten
1 T lemon zest
2 T Amaretto liquor
Pinch of salt
Powdered sugar for topping
Preparing the Pie
In a 4-5 quart saucepan bring the milk and rice to a boil then lower the heat and cook stirring frequently, making sure it doesn’t stick, for about 15 minutes until the rice is cooked and forming a pudding-like consistency with the milk.
Let cool for about 30 minutes, can be warm but not hot so the egg will not curdle. Add the remaining ingredients except for the powdered sugar. Mix well so all the ingredients are incorporated.
Using a springform baking pan lightly cover with bread crumbs or use parchment disk in the bottom of the pan to avoid sticking. Pour the rice mixture in and bake in a 350-degree oven for about 45 minutes until a toothpick comes out dry.
