Stefano Borelli

Stefano was born in Rome to an English mother and Italian father and has traveled since childhood. In the first part of his life, he was an anchorman for an Italian TV channel, planning news production. Now he is a freelance journalist writing articles on medicine and wine. He is also a professional sommelier and teaches Italian enography in the school for aspiring sommeliers of Fisar (Italian Federation of Sommeliers and Restaurateurs).

Stefano, what do you do for Il Chiostro, and how long have you been doing it?
I love working with the Chiostro because I find it an inspiring way of traveling and visiting places, in an active way. The groups are made mostly by painters, writers, artists, photography lovers that share a passion. And I find it so stimulating to be with them, to learn things, to interact with real art lovers and interesting people.

I have worked for Il Chiostro since 2022 as an assistant manager in Tuscany and Cinque Terre. In 2023 I worked as a program manager in Costiera Amalfitana and as an assistant manager in San Fedele (Tuscany).

Why do you like doing that job?
I love traveling and sharing my passion for Italian art and food wine culture. And I love the fact that it is small groups, so we have a family atmosphere. You get to know people well and we really get fond of each other.

What is your favorite Italian dish to make at home?
My favorite dish is breaded slices of veal meat with mozzarella and tomato.

Beat the eggs with a pinch of salt, dip the meat and dip in the breadcrumbs. Oil the pan and place the slices. Cut the mozzarella and tomato into slices. Place on top with salt and a drizzle of olive oil. Bake at 180 degrees for 30 minutes

Tell us about your unique talents or interests.
My other passions are running, trekking, dancing Argentine tango, and I like antiques. I am a great reader, and of course love traveling.
